The saga of Aveyronnais of Paris

Soon, some of them took the head of famous cafes. For example, Lipp on Boulevard Saint-Germain des Près which becomed the canteen of French politicians during more 60 years.

Or on the other side of the boulevard, Le Flore or Deux Magots, which attracted intellectuals and artists. Even today, some originating in Aveyron, managed to create real breaks in the decoration of coffee. Example, the brothers Jean-Louis and Gilbert Costes,called « les Costes ».

During the 1980’s, they worked with designers like Starck to revolutionize the traditional coffee and make it a magical place.Since, they were followed by many others.But they still remain an edge.Today, owner of dozens of trendy cafes in Paris, they have also renowned hotels.

IIt’s rather difficult to get correct figures. Twenty years ago, observers thought there were 6,000 bistros and hotel-restaurants, and 320 000 natives of Aveyron in the Paris area alone. Their networks and traditions have been kept alive for over a hundred years by holding special banquets for local village associations and by teaching folklore to the younger generations. All this goes to demonstrate how deeply attached Aveyron people are to their heritage and the country of their ancestors, almost in the same way as the Israelites regarded the Land of Canaan!
